This is my variation of the salad found at www.344pounds.com. It's simple but so amazing.
First, I sliced up my chicken breast and seasoned with salt, pepper, garlic powder, and onion powder. Then I placed the chicken in a skillet with heated olive oil.
While my chicken was cooking, I got out my salad greens (baby italian mix from kroger), cut my tomatoes, got my cheese (feta and italian mix) and prepared my plate.
Once my chicken was nice and golden as I like it, I applied the BBQ sauce and cooked for 1-2 mins. more on low heat.
I topped off my salad with Ken's Greek dressing.
I only cooked one chicken breast tonight and have some left to eat this again tomorrow. I'm out of feta cheese, so I hope I still like it tomorrow.
I'm SLOWLY adjusting my life for the better. I know there are a lot of things that I need to work on. I feel...or better yet... I KNOW that eating out ruins my finances and my health. I'm thinking of posting pictures of my meals and talking about food more not in order to become a food blog, but to see how my finances will change as a result. I have another meal that I want to post that I prepared Sunday, but I will wait until the weekend to share it.
